Layered Roasted Peppers with Pesto and Cheese

I’ve mentioned roasting peppers before and it’s still one of my favorite ways to eat peppers. Today I took some long, red, sweet peppers and roasted them up. I was going to stuff them like I do Anaheim chili peppers but they were too thin fleshed to hold together for that. Instead I layered them into a baking pan and created something resembling a casserole.

Recipe

About 12 sweet peppers (maybe 8 if you’re using large bell peppers) roasted and skins/core/seeds removed

8 ounces shredded mozzarella cheese

6-8 ounces cottage cheese

8 ounces farmer’s cheese, crumbled (This is a tangy cow’s milk cheese that is a little crumbly and curdy.)

1/4 c chopped, sun dried tomatoes

6 ounces diced pancetta

1/4 cup finely chopped onion

3/4-1 cup of pesto sauce (I made my basil/chive pesto again tonight)

Preheat the oven to 350F. Line a baking dish with aluminum foil and spray with cooking spray.

Brown the onions and pancetta in a small skillet. Set aside to cool for a few minutes.

Mix the cheeses and sun dried tomatoes in a bowl. Add the pancetta and onions.

Half the peppers should be laid open flat on the baking sheet. This first picture shows the first layer in the pan.

After putting the first layer of peppers down, spread the mix of cheeses across the top of the peppers.

This second picture shows the cheese mixture spread out over the peppers.

The next step is to layer the other half of the roasted peppers over the cheese.

Finally, I top the peppers with pesto sauce and more mozzarella cheese. Then into the oven to bake for probably half an hour or so. The cheese needs to get all melty and bubbly.

Once this all comes out of the oven it’s sort of like a pile of melted cheese goo with some peppers around it lol. It also tastes completely awesome. The combination of cheeses and the lemony bite of the pesto go so well with the sweetness of the peppers and the little chunks of meaty pancetta. I was going to cook up some Barramundi fillets tonight and decided that I didn’t need to lol. I’ll cook the fish tomorrow šŸ™‚
